Protein Power Bars

Red Tractor Paleo Cashew Hemp Granola isn’t just for breakfast, it is also a wonderful protein and fibre rich ingredient. These Protein Power Bars are fantastic for gym lovers, busy athletes, with your morning coffee or for an afternoon snack with a cup of tea!
300g Red Tractor Paleo Cashew Hemp Granola (1 packet)
10 dried Dates (roughly 65g)
50g Raw Almonds
50g Desiccated coconut
40g Coconut Oil
2 tbsp Almond Butter
1-2 tbsp Honey
1tsp Vanilla Extract
Soak the dates in boiling water for 10 minutes. While they are soaking, line a brownie tin with grease proof paper.
In a small pan heat the coconut oil, almond butter, honey and Red Tractor Organic Cacao Powder, until smooth.
Drain the dates and then put the Red Tractor Paleo Cashew Hemp Granola, dates and almonds and vanilla extract in a food processor and whiz it up for a couple of minutes or until it forms a crumb like texture. Then add the Red Tractor FHC, coconut and the cacao mix into the food processor and whiz to combine everything.
Tip the mixture into the tin and flatten as evenly as possible. Put the tin in the freezer for 30 minutes to set firm and then turn out ton to a chopping board and cut into 16 bars. Stored in the fridge for up to 5 days or in the freezer for 1 month.
