Grain & Gluten Free, Nut Free, Low Carb / Keto Friendly
Many people when they are on a Keto or low carb diet miss bread! This Red Tractor Coconut Flour bread is quick and a lovely alternative, it is full of protein and fibre. I have made the basic version here but adding herbs and spices for savoury uses or vanilla paste for a sweeter option is great way to alter it for your meal occasion.
I love it toasted and loaded with smashed avocado but it can be eaten fresh or toasted with sweet or savoury toppings or simply alongside a soup or salad with loads of butter!
Ingredients 70g Red Tractor Coconut Flour
120g Butter, softened
7 Organic Eggs
½ tsp Himalayan Salt
½ tsp Baking Powder
½ tsp Xanthan Gum*
Adding herbs and spices to this is a great way to flavour the bread.
Preheat oven to 175°C and line a loaf tin with baking paper.
Crack the eggs into a bowl and mix until light and frothy.
Add the Red Tractor Coconut Flour, butter, salt, baking powder and xanthan gum and mix until really well combined. The mixture will become thick as the Red Tractor Coconut Flour absorbs the liquid.
Pour the batter into the prepared loaf tin and flatten the top with a spatula. Bake for 45-50 minutes or until a skewer comes out of the middle clean.
Slice and eat with butter or your favourite sweet or savoury toppings.
Store in the fridge for up to 4 days or freeze for up to 2 weeks.
*The Xanthan Gum helps to bind the ingredients so it is easier to cut into slices without crumbling.
