Chocolate Chip Cookies

Grain & Gluten Free, Nut Free, Low Sugar, Low Carb / Keto Friendly

 

These Coconut & MCT Flour Chocolate Chip Cookies are quick, simple to make and delicious. The combination of coconut and chocolate always go well together and these are a great low carb option for those following a Keto or low carb diet but craving that sweet treat.


60g Butter, softened

40g Coconut Sugar

2 Organic Eggs

1tsp Vanilla Extract

½ tsp Himalayan Salt

½ tsp Baking Powder

40g dark Chocolate Chips


Preheat oven to 170°C.


Mix together the butter and coconut sugar until light and fluffy.

Then add the Red Tractor Coconut & MCT Flour Blend, eggs, vanilla extract, salt and baking powder until well combined and the mixture thickens as the coconut flour soaks up the liquid.


Stir through the chocolate chips.


Then take a tablespoon of the cookie dough and roll into a ball, this mixture should make 12. On a lined baking tray press into a cookie shape with your hands. These cookies don’t spread so you can decide on how thick you want them.


Bake for 10 – 15 minutes or until the bottom and edges of the cookies are golden brown.


Allow to cool on the baking tray for a while before moving to a baking rack to allow to cool completely and then enjoy!


Store the cookies in an airtight container for up to 5 days either at room temperature or in the fridge.
